Tom Grundmeyer, age 27, of Eagan, MN died unexpectedly on October 15, 2020 after a brief illness, leaving his family and friends with huge holes in their hearts and lives. He was a kind and gentle soul who had and appreciated a good sense of humor and was always easy and fun to talk with and be around. He was born on February 10, 1993 to Alan and Kelly (O’Neill) Grundmeyer in Minneapolis, MN. He grew up in Inver Grove Heights and graduated from Simley High School in 2011 and from the University of Minnesota in 2015. After college, Tom worked for a software firm in customer service and support and took a lot of pride in his work. Tom was a fantastic cook and it was always a delight when he cooked for his family and friends. He loved biking and earlier this year traveled to Boise to pick up a new bike. He loved to read and travel and spend time with family and friends. He is survived by his mom and dad, Kelly and Al and his brother, Brian, Inver Grove Heights, MN; grandmothers, Muriel O’Neill of LeSueur, MN, and Bernice Grundmeyer of Lamont, IA; many aunts, uncles, and cousins, and his dear friend and roommate, Emily Rasmussen, who will all miss him dearly. He is preceded in death by his grandfathers, James O’Neill and Willis Grundmeyer; uncles, Daniel O’Neill and Dean Grundmeyer; and a cousin his age, Jack O’Neill. A private service will be held, due to the current pandemic.
